I just wanna tell you that the following interpretations are not mine I read them in a book

This saying was originated because butter melts in warm environment.So when we use it we mean that the person looks innocent


Dear english,a person who is guilty but playing innocent is considered cool or even cold which means that butter wouldn't melt in his mouth,but we should keep in mind that he's only "pretending" to be innocent
